Tagliatelle tah-lyah-TELL-eh These long thin, flat strips of pasta are very similar to fettuccine and about 1/4 inch wide. "Tagliatelle" is the name used in northern Italy for fettuccine. Legend has it that a talented court chef was inspired by a noblewoman's hairstyle during the Italian renaissance period, and dedicated this new dish to her in the occasion of her wedding. With their rich and light layers they look like small nests. When they are cooked, they unwind in the dish in subtle shapes. They go well with a hearty meat sauce.
