Pappardelle pa-par-DAY-lay The word pappardelle comes from the Tuscan word pappare, meaning to eat. These are wide flat ribbons of pasta that are approximately 5/8 to 1 inch in width, sold either dried or fresh. It is available with straight edges or rippled edges. Served with vegetable or meat sauces and dishes such as ragł, hearty meats, and pot roasts.
