Sometimes spelled catsup is said to be Asian in origin and thought to have come from the Chinese word ketsiap, meaning fermented fish.  If this is true the sauce would have been very different because tomatoes were not introduced into their cuisine until the 18th century.

Ketchup is a thick, sweet and sour, tomato-based seasoned with vinegar, sugar, salt and spices like clove, cinnamon and allspice. Ketchup is used as a condiment to go directly on food like a hamburger or hotdog or r a component in many dressings, sauces or dishes like Russian dressing, meatloaf and cocktail sauce.
