There is no U.S. Standard grades for Swiss Chard.

The leaves should be fresh, crisp, not showing yellow or browned portions, and should be free of insect infestation.  They should be clean and cold and the stalks should not be rubbery and wilted as they will be tough and unsatisfactory.  Coarse stalks indicate pithiness, test by pressing or twisting the stalk.
