Barracuda are warm-water fish and belong to the Sphyreana family. There are five commercially important varieties of the barracuda. The great barracuda and the pacific barracuda are the most important of these five. Barracuda range from 24-72 inches in length although some adults can grow to more than 12 ft in length. The typical barracuda weighs between 4-9lbs. Being a fish of warm tropical waters, it can ingest the organisms that create the ciguatera toxin. As a result only smaller barracuda are harvested for market Preparation: Fillets and steaks grill and oven-broil nicely, and they hold their shape well. Barbecuing (basting with a full flavored sauce) is popular. Purchasing: Sold fresh and whole (beheaded and dressed) in California markets; fillets and steaks. It is also sold smoked or canned. Barracuda is popular main ingredient in fish cakes.
