Basa (Pangasius Bocourt) a farm raised fish of the Mekong Delta in Vietnam this member of the catfish family resembles a cross between the American Catfish and the New Zealand Orange Roughy. The meat is snow white with a flavor said to be similar to Chilean Sea Bass. The Basa has more oil than the American Catfish with a mild flavor, light buttery flavor with its firm textured white meat resembling sole. Can be cooked in almost any fashion, sautéing, grilling, baking work extremely well. This fish absorbs flavor so marinating works well.
