Perch, a name used for some saltwater
fish, is also a widely used name for various freshwater fish. The
freshwater yellow perch found in the Great Lakes and all its tributaries,
as well as the European perch are small fish. Usually sold whole,
butterflied or filleted, they are good for pan-frying.
