The only freshwater member of the Cod family, it is found in North America, Europe and Asia. A large species is found in Alaska and Siberia that can reach five feet in length and weigh over 60 lbs. It is found in very deep water except during spawning season.

The Burdot has somewhat of an eel shape, with scales embedded in a heavy skin which is usually removed for preparation. The flesh is well suited for poaching but is also fried.

The Burdot has white firm flesh that is a little oilier than its saltwater relative.  The liver and roe are considered delicacies in some areas.
