ATLANTIC SEA SALT: |
From the ocean's main waters is
has a green hue to it. The green
tint comes from the large amount of sediment which it contains. This
salt has a nice, fresh, green flavor to it. I would not use this salt
in sauces or consommés since it has a lot of deposits, which tend to
really cloud clear water when dissolved. It is a medium course grain.
This salt has a very sea like flavor to it. A variety called Casco Bay
is a larger crystal salt from colder water, which makes it not quite
as intense. |
