Prepared salads can only be stored for a short period of
time. They must be stored at a temperature between 35° to 40° F with
high humidity.
Store all marinade salads in their marinade, under
refrigeration.
Salads may be pre-plated and refrigerated the quality of
the product will begin to deteriorate in a short period of time. for
this reason it is important to serve the salads as soon as possible. If
they are to be stored for any period of time in this state they should be
wrapped.
