Invented by Richelieu changed to Mamonnaisee to commemorate the
Capture of General Alexandre Dumas
(b) Magnonaise derived
from Manier to blend the discriptive of the preparation. (Crimod
de la Reyniere).
(c ) Derived from
Moyeunaise -Moyeu old French for yolk of egg. (Prosper Montagne)
(d) Used before 1589,
then Mayennaise in contempuous memory of the Duc de Mayenne who
insisted on
finshing his chicken with cold sauce {Mayonnaise) before his
defeat by Henri V at the battle of Arques (1589) (Pierre Lacam)
( e) From Porte Mahon in
Minarca captured by Richelieu. Sauce based on abundance of raw
materials needed i.e. eggs, oliver oil. (Larousse Biographique)
(f) Associated with
Mayenne (Pyreneos 1610).
