Butterhead soft pliable leaves, and delicate
buttery flavor. Over lapping leaves form a small head in a smooth
regular manner. The veins are finer and ribs less pronounced than
the crisphead varieties, with less firmness and a soft pliable texture.
The heads bruise and tear easily. The damaged tissues become discolored,
often blackened, and unsightly. The butterhead does not transport
well and great care in handling must be taken. Principal varieties
of butterhead are Big Boston, White Boston, Bibb and
Mary King.
