Hard Salami [dry sausage]
Less highly flavored and more heavily smoked than
Italian salami and contains Garlic.
This coarsely cut
sausage is made of equal weights of beef and pork, seasoned with
salt, white pepper, garlic, and sugar . After curing, the meat is
stuffed into sewed beef middles that are 20 in. long and 3-1/2 in.
in diameter, or hog casings. Loops . of twine are drawn slightly
into the casing every 2 in. to give a scalloped appearance. German
salami is air-dried, and may also by lightly smoked.
Ingredients: Beef, pork.
Seasonings: Garlic, black pepper, salt, sugar.
