A cooked mildly flavored
Italian salami.
Coarsely ground meats are
mixed, and cured for 48 hours, then remixed, seasoned, and stuffed
into large casings. The "sticks" are smoked, then cooked in dry
heat.
Ingredients: Beef, pork.
Seasonings: Whole black peppercorns, dextrose, garlic,
