Granton, undulated, fluted-edged knives are used for cutting softer foods such as salmon, ham, and roast meats. The flutes are sometimes on only one side, but when they are on both sides they should be staggered to give extra flexibility and strength. They can be sharpened on a steel in the normal way because of their straight edge.
