       Chopping Block (jum baahn)
 A smooth-surfaced tree cross section, 12 to 15 inches in
 diameter and 6 to 8 inches thick. It is used for heavy chopping, mincing, 
      and
      boning, and gets constant use.
 A
      chopping block should never be soaked in water. It should be wiped clean
      with a wet sponge using disinfectant or if very dirty rubbed with steel wool 
      then wiped with the damp sponge.
