White tea is the least processed of teas. The best
white teas come from the leaves picked before the buds have opened and
covered with the silky white hairs. White teas are delicate, with
sweet grassy aromas and fruity notes. Some have distinctive shaped,
like the Jasmine tea plant which has a closed oval bud when dry and
sprawling, purple-centered flower when steeped.
