Pu-erh tea comes from the province of Yunnan in southern
China. The tea is usually inoculated with bacteria then fermented.
After fermentation the tea is formed into flat, round cakes and aged.
Sometimes this teas is aged for as long as 50 years and can cost as much
as $1000.00 per pound. After two years the leaves attain a color
similar to coffee and will have a earthy slightly smoky, strong and tannic
taste.
