Oven Roasted Vegetables |

Root Vegetables, in season during the Thanksgiving and Christmas Holidays lend themselves to roasting along with the turkey. Parsnips, turnips, onions. and even celery develop a sweetness in the roasting process that add a balance of flavor to the meal. Cut the assorted root vegetables into at least a 1 inch cube of cut. The vegetables need to be larger so as to roast to a golden brown without overcooking in the center. Place the vegetables in the pan with the turkey 1 hour before the turkey is done. Mix the raw vegetables around in the juices immediately coating them thoroughly. Add chopped herbs and spices so as to enhance the flavor. Do not add salt until after the vegetables are removed so as not to over salt or leave too much of a salt in the pan in the deglazing process. |
