Pompano Trachinotus
carolinus
Pompano from the Spanish word "leaf of the grape" is a
very desirable fish, in fact it is said to be one of the choicest of all
saltwater fish, there by making it also one of the most expansive.
The flesh of the pompano
is white, firm, flaky and has a moderate amount
of very delicate oil. Caught mostly in the South Atlantic and Gulf Coasts
mostly off the shores of Florida the Pompano has caught weighing as much
as 8 ponds but the common size is closer to 1 1/2 pounds.
