The smallest species of sturgeon weighing up to 100 pounds but the average is 35 to 50 pounds.  The Sevruga is most prolific and produces between 2.5 to 12 pounds of eggs. 

Celebrated for its delicate, fresh flavor and its firm texture; the eggs are small, dark gray to black in color with a smooth aromatic and savory taste and instead of melting away, each small grain pops in your mouth.
