Culinary enthusiasts argue over the many ways to enjoy caviar—with or without egg, with or without onions, with or without lemon — the recognized rule is: "the simpler, the better.” The purists prefer to serve caviar on top of unsalted toast points at room temperature, allowing it to develop its full bouquet.

Other considerations:

Caviar should be served from a non-metal spoon. Caviar spoons are widely available in bone, tortoise shell and mother of pearl. Any metal, including silver, will impart a metallic flavor to the granules.

The flavor of lesser grades can be enhanced with a dab of fresh lemon juice.

If you don't have a caviar server, place the caviar in a small glass or porcelain bowl inside of a larger bowl which is filled with crushed ice. Make sure that the water does not enter the caviar bowl as the ice melts.

It is important when serving caviar that the jars are removed from the refrigerator 10 to 15 minutes before serving, and opened immediately before consumption.

If serving caviar on crackers, use an unsalted variety.

The two most popular beverages to serve with simple caviar are frozen vodka or a very dry champagne or sparkling wine.
