Stand relaxed. Assume the grip discussed. Your left hand
and forearm should point across your body and your right hand and forearm
should point in the opposite direction as illustrated. This
should form an
"X". This is a natural and comfortable position from which to work. It is
important that a standard foot, body, and hand placement be achieved in
order to ensure consistency. When cutting takes
place, a consistent motion of the knife can be achieved.
