Fresh yeast is sometimes referred to as cake yeast or
compressed yeast. It has a short shelf life of about two weeks and
should be kept under refrigeration. Bakers consider the flavor of
this yeast superior.
To convert measurements from fresh to active dry yeast,
multiply the fresh yeast by 0.4.
To convert to instant yeast multiply the fresh yeast by
0.33.
