Nut and seed oils range from pale golden yellow to amber and span the
aroma and flavor index from a hint to very aromatic and flavorful. With
the exception of peanut oil they generally have a low smoke point and are
used as finishing oils because their flavor breaks down under heat.
Nut oils are best stored in a dark cool
place and after opening under refrigeration. If stored properly the shelf
life should be about 3 months.
