The persimmon should be well shaped, plump, smooth, highly colored, with unbroken skin, and stem cap attached.  It is desirable to select fruits that are soft as jelly, scented and ready to eat.  It is sometimes impossible to sell the persimmons on the retail market at this stage of ripeness due to the damage that occurs from handling by the retail consumer.  When buying, select firm fully colored persimmons, and hold them at room temperature until the are soft, or ripen by placing them in a plastic bag with ripe apple
