Hachiya is the most popular
variety grown in California and accounts for more than 90% of the
cultivated acreage of persimmons in the state. The remaining cultivated
acreage is split between the Tanenashi, Hyakume, Fuyu, and Tamopan plus a
few called the Maru varieties.
The Hachiya has
an
attractive
deep
red
color
at
maturity
with
a
smooth
glossy
surface.
The
variety
is
large,
sometimes
weighing
over
a
pound
and
has
an
acorn
shape.
This
variety
is
considered
a
good
shipping
variety,
is
seedless
and
ripens
uniformly,
with
a
clear
yellow-colored
flesh.
When
pollinated,
black
areas
appear
in
the
flesh
around
the
seed.
A
large
gelatinous
membrane
covers
the
seed,
or
occupies
the
seed
cavity
when
the
flesh
becomes
pleasantly
sweet
and
highly
perfumed.
This
variety
is
used
as
a
dessert
product,
dried
or
cooked
in
prepared
foods.
