Celery varieties are classified by color, green and golden and then by types with in the color division.  Types of green celery are the Utah Type which includes subtypes of ordinary Utahs and Crystal Jumbo, Summer Pascal Type with Summer Pascal, Emerson Pascal and FM D5, Easy Blanching Type, and Slow Bolting Type.  The Bolting Type.

The  Golden varieties are  divided into Golden Self Blanching, Golden Plume and other types.

The trade generally calls all green celery Pascal.  The Utah varieties such as Crystal Jumbo subtype are the most widely grown
