Mole Coloradito or The Little Red is basically the
same as Mole Rojo, but the seeds of the chile are also used. They are
toasted along with
peanuts,
almonds and
sesame seeds, which are ground to
a fine powder or paste, and like the Mole Negro, sweet and savory spices
are added
with bitter-sweet Mexican
chocolate,
sugar and meat stock.
