Mole Amarillo (Yellow A-ma-dio Mole) is
not really yellow, but more of a pale brick red to almost a pumpkin color.
The fresh yellow
Guajillo chile is used along with dried California chiles.
The usual mixture of
onion,
garlic,
oregano,
cloves and fresh
tomatillo is
then
added. This light, tasty sauce is thickened with masa which helps
lighten the color. This sauce is served with vegetables,
chayote or
chicken (that has been poached with
epazote and pulled off the bone).
