Fruit vinegars are normally the mildest vinegars. Cider vinegar is
probably the most well known and used but today just about every fruit has
a vinegar. These vinegars are great for making vinaigrette because
their mild more balanced flavor requires it to be combined with less oil.
Cider vinegar is often used for pickling and for preserving vegetables.
Other mild fruit vinegars are used for delicate presentations, even fruit
salads.
