Sherry vinegar is wine vinegar made from Sherry, the famous fortified wine
of southern Spain. Like Sherry itself, Sherry vinegar is aged using
the solera system, where younger vinegars are mingled with older vinegars
in a pyramid of oak barrels. Sherry vinegar has a caramel and almond
like quality similar to that of sherry wine.
