Dolly Varden (Salvelinus malma)

Named after a character in Charles Dickens's novel "Barnaby Rudge" it is found from northern California to Alaska and from Japan to Korea.  The Dolly Varden trout looks somewhat like the Artic Char and often has orange or yellow spots on its sides but the spots are smaller than those on the Artic Char.

The Dolly Varden can attain a weight of over 30 pounds but the usual catch is 2 to 3 pounds.

During summer and fall the wild trout contains more flavor as its fat content is higher than winter and early spring.
