From western America from the mountain states to northern California to Alaska this trout has many subspecies that vary greatly in color but all have black spots and red markings below the lower jaw giving this trout its name. The flesh of this trout may vary in color from pale yellow to orange or red. Some fish are located in areas where they have a diet of freshwater shrimp which creates a firm meat with great table appeal. The average catch is between 1 to 1 1/2 pounds but cutthroat have been caught up to 40 pounds. The harvest trout which is the sea-run form
