Internal Appearance- The fruits anatomy has an important bearing on its internal appearance. As stated above in the flavor section the locular content (jelly and seeds) and the flesh is important. The locular contents vary from very little, to a fairly large portion of the fruit. An example of this would be recent studies on Florida Tomatoes that showed locular contents varying from 15% to 32% of the fresh weight of the tomato. The color or pigment found in each portion of the tomato also varies substantially. The outer wall has the highest red content (lycopene) and the lowest yellow (carotene) ratio, therefore the outer wall will have the highest red to yellow ration. This means, if the color of the fruit is going to be good the amount of locular jelly must be small in comparison with the amount of flesh. |
