 Color Classification        There are 6 color classifications for tomatoes:
Green Surface completely green; may vary from light green to dark green
Breakers A definite break from green to tannish yellow, pink or red on not more than 10% of the surface (the normal break occurs at the blossom end)
Turning From 10% to 30% of surface in aggregate tannish, yellow, pink, or red
Pink From 30% to 60% of the surface in aggregate pink or red
Light Red Over 60%  of the surface in aggregate pinkish red, or red, but not over 90% red.
Red Over 90% of the surface aggregate red
