Zucchini  
A fruit and pod vegetable. A gourd related to the squash and used extensively in Italy.

Zucchini is widely grown and on the market all year.  The squash has a cylindrical, straight, with fairly square ends.  The skin color is moderately dark green over a ground color of pale yellow, and a surface heavily marked with a greenish black lace-like pattern. which concentrates to form solid dark green stripes.  The squash is harvested at 10 to 12 inches in length and 2 to 3 inches in diameter.  At the edible stage  the shell is soft and thin, the flesh is pale greenish white, of moderately fine texture.  There are variations, such as Grey Zucchini which is medium green with grayish coloration. and Black Zucchini which has a solid dark greenish black color.

Select   Firm, dark green, small zucchini; use as soon as possible.
