Wiltoof or French Endive  15 to 18 inches tall, foliage smooth, long, medium dark green, inner leaves and heart are used in salads, and in fall, roots can be reset and forced indoors resulting in a second growth crown of compact leaves. The head and leaves is 4 to 5 inches long, tender, with a rich but mildly acrid flavor.
