Endive (Cichorium endivia)
is always marketed in the headed form, larger heads can weigh in excess of a pound.  The leaves vary from deeply cut and deeply curled in some varieties to broad, slightly cut and curled leaf of escarole.  the outer leaves are green, and the center or heart, and midribs are pale green to creamy white.
