To Prepare  
Green, string, snap or wax beans  Break off both ends and pull off any strings. Cut beans into three thin strips with a bean cutter, French cut into diagonal strips, or straight across, with a sharp knife. Cook in cut form, or whole. Drain well before serving.

Lima beans   Shell and discard pods. Drain cooked beans well before serving.

Test for Doneness   Taste test and drain as soon as beans are tender but not soft. Color should be bright and un-faded.
