Thuringer Style Sausage:
A ground pork and sometimes veal and beef sausage
with a seasoning similar to pork sausage but without sage, form
links 1 3/8 inches in a diameter and 6 to 8 inches long. The links
are usually dipped briefly in hot water, then chilled. Fresh
Thuringer is stuffed in large hog casings, and linked 3 to 5 to the
lb. Dry milk solids are often included in the formula.
Ingredients: Pork, or pork and veal, and
usually dry milk solids.
Seasonings: Coriander, ginger, ground
celery seed, mace, pepper, salt, sugar
