Devonshire Style Sausage

Dry, firm, fresh pork sausage
is wrapped in hog caul fat, instead of
being stuffed into casings. Originated in Scotland. The sausage,
about an inch in diameter, is cut into 3 or 4-inch lengths for
packing into cartons.
Ingredients: Freshly ground pork,
caul fat for casings. .
Seasonings: Mace, pepper, sage, salt, sugar |
