Devonshire Style Sausage [fresh sausage] Dry, firm, fresh pork sausage is wrapped in hog caul fat, instead of being stuffed into casings. Originated in Scotland. The sausage, about an inch in diameter, is cut into 3 or 4-inch lengths for packing into cartons.

Ingredients: Freshly ground pork, caul fat for casings. .

Seasonings: Mace, pepper, sage, salt, sugar
