Copper is the best conductor of heat which enables products to cook faster and more evenly than other materials.  The down side of copper is the expense and upkeep which makes it difficult to use in a commercial kitchen.

Copper pans lined with tin perform better than those lined with stainless steel because tin is a better heat conductor. But tin lined pans must be resurfaced periodically depending on the amount of use.
