After copper aluminum is the second best metal for pans when it comes to heat the conduction of heat.  A stainless tell layer is often used to line the pan because of aluminum's reaction to acidic foods. 

Anodized aluminum pans are made with an electrochemical process that renders the surface nonreactive and stick-resistant.  However anodized aluminum is not a nonstick surface.

Europe has outlawed the use of aluminum cookware because of fears that it may cause higher incidents of Parkinson and Alzheimer's disease.
