Stripping cuts a cylindrical vegetable (asparagus, carrot) diagonally. After each slice the left hand rolls the vegetable toward the cutter in such a way that the knife slices through part of the surface exposed by the previous cut. Stripping produces variously faceted shapes, which may not be as attractive as diagonal slicing.
