Mayonaise - Sauce
Mayonnaise a la russe
Beat equal parts of liquid meat aspic and
mayonnaise. Add a dash of tarragon vinegar and some finely grated
horseradish are added to the mixture, which must be beaten over ice
until it thickens. Used as a sauce for vegetable salads,
coating seafood and timbales, it must be used immediately
