A washed rind French cheese made from cow's milk, Munster d' Alsace is the one and only true Munster and probably the most renowned cheese to come from the Alsace and Lorraine regions, particularly the Vosges mountains. Alsatian Munster is superior to German Muenster and deli Muenster. It is said to be first produced by Irish monks before the 7th century. This cheese develops a mold on the outside when it ages, and they wash it with brine or brandy or beer, to take the mold away and intensify the flavor. The rind-washing process produces a red skinned thin rind and the cheese ripens fully after about 3 months. The earthy, barnyard aroma is the main characteristic said by Aficionados of smelly cheeses to rank Alsatian Munster high, not only because it stinks so invitingly but because it follows through with flavor.
