Large game such as those listed below are becoming more
popular due to their low calorie and fat content. Many game animal
varieties rarely make it into the commercial restaurants. When
approaching most game apply the rules of venison cooking and you will
usually be OK. Remember the low fat content will cause issues if the game
is cooked or held after cooking too long.
Such game would include reindeer, elk, antelope and
gazelle.
