Sesame seed oil is made from toasted
sesame seeds with a dark caramel
color and a very strong flavor. This oil can be purchased with the
seeds untoasted for a lighter color and mellower flavor. Sesame seed oil
is used frequently in Asian cuisine, but is not suitable for cooking.
Flavor-wise when used as a finishing oil a little goes a ling way. For
some uses sesame oil is cut with vegetable oil to avoid over exposure.
