Rock shrimp (Sicyonia brevirostris) Rock shrimp occur from about Norfolk, Virginia south throughout the Gulf of Mexico to Cabo Catoche, Yucatan. They are typically found in water 33’–240' deep, but exploitable populations occur between 112' and 180' and are related to the warm water pink, brown and gulf white shrimp. Rock shrimp are similar in size to medium sized coldwater shrimp with the largest being 21-25 per lb. The rock shrimp have a rock hard shell that is usually removed commercially prior to sale. Rock Shrimp have a sweet taste and a chewy, tender texture that is a cross between wild shrimp and crayfish. When Cooked the rock shrimp have a distinctive red pigment to their skin. |
